A moist, fluffy cake with pineapple filling, perfect for celebrations or teatime. The classic vanilla flavor combined with sweet pineapple makes it universally appealing.

Ingredients

  • 1 c. shortening
  • 2 c. sugar
  • 4 eggs
  • 3 c. sifted plain flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 1 tsp. vanilla extract
  • Pineapple Filling

Instructions

  1. Cream shortening in a bowl.
  2. Add sugar gradually, beating until light and fluffy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Add sifted dry ingredients alternately with milk and vanilla, beating well after each addition.
  5. Pour batter into three greased and floured 9-inch cake pans.
  6. Bake at 350°F for 25 to 30 minutes or until cakes test done.
  7. Cool in pans for 10 minutes before removing to racks to cool completely.
  8. Spread Pineapple Filling between layers.
