  • 1 (28 oz.) can plump tomatoes
  • 3 qt. water
  • 1/2 c. olive oil

  • 2 carrots, chopped
  • 1 (10 oz.) pkg. frozen spinach, chopped

Instructions

  1. Place lentils in a bowl.
  2. Add water and soak overnight.
  3. Drain and discard soaking water.
  4. Wash lentils well in water.
  5. Place lentils in a soup pot.
  6. Cover with 3 quarts of water and bring to a boil.
  7. Add chopped onion, chopped celery, chopped carrots, canned tomatoes, olive oil, and chopped spinach.
  8. Season with salt and pepper to taste.
  9. Add grated cheese before serving.
