Ingredients

  • 1 cup self-rising flour
  • 2 cups self-rising white cornmeal
  • 1 1/2 cups chopped green onions
  • 2 tablespoons sugar
  • 2 1/4 cups cold milk

Instructions

  1. Mix the self-rising flour, self-rising white cornmeal, sugar, and chopped green onions thoroughly.
  2. Add cold milk to the dry ingredients and mix well to form a batter.
  3. Heat oil in a skillet to about 1/4 inch depth. Drop 1 tablespoon of batter into the hot oil for each cake.
  4. Cook until golden brown, turning only once as you would with a pancake.
  5. Drain on paper towels.
  6. The finished cakes should be about 1/2 inch thick with curled edges.
