Open Peach Cake

- Melt butter, remove from heat, and let cool.
- Mix the egg, sugar, and vanilla in a mixing bowl; stir in the cooled butter.
- Sift flour and baking powder together; stir into the mixture until the batter is fairly sticky.
- Pour the batter into an oblong 7 x 12-inch baking dish.
- Press the dough with floured hands to fit the bottom of the dish.
- To skin peaches, place each in boiling water, remove immediately, and peel.
- Cut peaches into 1/2-inch wide pieces and arrange overlapping on top of the batter, pressing in slightly.
- When the peaches cover the batter, sprinkle sugar liberally over the top.
- Bake in a preheated oven at 350°F for 20 to 25 minutes.
