Ingredients

  • 3 1/4 Tbsp. butter
  • 1 egg
  • 1/3 c. sugar
  • 1 tsp. vanilla
  • 1 c. flour
  • 1 tsp. baking powder
  • 6 large or 8 medium peaches

Instructions

  1. Melt butter, remove from heat, and let cool.
  2. Mix the egg, sugar, and vanilla in a mixing bowl; stir in the cooled butter.
  3. Sift flour and baking powder together; stir into the mixture until the batter is fairly sticky.
  4. Pour the batter into an oblong 7 x 12-inch baking dish.
  5. Press the dough with floured hands to fit the bottom of the dish.
  6. To skin peaches, place each in boiling water, remove immediately, and peel.
  7. Cut peaches into 1/2-inch wide pieces and arrange overlapping on top of the batter, pressing in slightly.
  8. When the peaches cover the batter, sprinkle sugar liberally over the top.
  9. Bake in a preheated oven at 350°F for 20 to 25 minutes.
