Orange And Ginger Biscotti
Ingredients

- 3/4 cup plus 4 tsp sugar ⓘ
- 1/2 tsp vanilla extract ⓘ
- None None Finely grated zest of 1 orange ⓘ
- 2/3 cup all-purpose flour ⓘ
- 1/2 tsp baking powder ⓘ
- 1 tsp ground ginger ⓘ
- 1 cup mixed nuts ⓘ
- 1/2 cup candied ginger, chopped ⓘ
- 3 1/2 oz dark chocolate, melted
- 3 1/2 oz white chocolate, melted ⓘ
Instructions
- Preheat oven to 350°F. Lightly grease and line a baking sheet with parchment.
- In a large bowl, using an electric mixer, beat eggs and sugar together until pale and creamy. Beat in vanilla and zest.
- Sift flour, baking powder, and ground ginger together onto a piece of parchment. Fold into butter mixture with nuts and candied ginger.
- Divide mixture in half. Roll into two 2-inch-thick logs. Place on baking sheet. Bake 20-25 minutes, until lightly golden. Leave on tray to cool completely (or overnight).
- Cut logs into thin, diagonal slices. Arrange in single layer on baking sheet. Bake 10 minutes on each side. Transfer to a wire rack to cool.
- Dip one end of each biscuit into either dark or white chocolate and allow to set. Serve with coffee.
