Ingredients

  • 1/3 cup orange juice
  • 2 Tbsp soy sauce
  • 1 1/3 tsp olive oil
  • 1/2 tsp grated ginger root
  • 8 oz chicken breast
  • 1 cup mandarin oranges
  • 1 1/2 tsp cornstarch
  • 12 cashews

Instructions

  1. Stir together orange juice, soy sauce and grated ginger root.
  2. Add chicken to the mixture and let stand for 30 minutes at room temperature.
  3. Drain the chicken and set aside the sauce.
  4. Saute the chicken in olive oil until cooked through.
  5. Mix the reserved sauce with cornstarch until smooth.
  6. Stir the sauce mixture into the pan with the chicken and cook until thick and bubbly.
  7. Stir in mandarin orange segments and cashews before serving.
