Ingredients

  • 3 cups flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 egg
  • 2 teaspoons orange rind
  • 1 cup orange juice
  • 1/3 cup melted shortening
  • 1/2 cup coconut

Instructions

  1. Sift together the flour, baking powder, salt, and sugar.
  2. Mix together the slightly beaten egg, orange rind, orange juice, melted shortening, and coconut.
  3. Add this mixture to the flour mixture and stir just enough to moisten.
  4. Pour into a greased and floured pan.
  5. Bake for 60 minutes at 350°F (175°C) until a toothpick inserted into the center comes out clean.
