Ingredients

  • 1/3 cup orange juice
  • 1 tablespoon soy sauce
  • 2 teaspoons honey
  • 1 1/2 teaspoons cornstarch
  • 1 teaspoon grated peeled fresh ginger
  • 2 teaspoons vegetable oil
  • 2 tablespoons sliced green onion (white part only)
  • 2 garlic cloves, minced
  • 1 orange peel strip, slivered
  • 1 pound boneless, skinless chicken breast meat, cut into 1/2 x 2-inch pieces
  • freshly ground pepper

Instructions

  1. Whisk orange juice, soy sauce, honey, cornstarch, and ginger in a small bowl until the cornstarch and honey dissolve.
  2. Heat vegetable oil in a large heavy skillet over high heat.
  3. Add sliced green onion, minced garlic, and orange peel to the skillet and stir-fry until fragrant, about 1 minute.
  4. Add chicken pieces and stir-fry until opaque, about 3 minutes.
  5. Pour in the orange juice mixture and stir-fry until the chicken is cooked through and the liquid thickens, about 4 minutes.
  6. Season with freshly ground pepper and salt if desired, then serve.
