Ingredients

  • 2 cups cake flour or 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 2 eggs
  • 1/3 cup orange juice
  • 1/3 cup milk
  • 2 tablespoons melted butter
  • 2 teaspoons grated orange rind
  • 1/2 cup finely chopped pecans

Instructions

  1. In a bowl, sift together the flour, salt, sugar, and baking powder.
  2. In a separate bowl, beat the eggs with a fork.
  3. Blend in the milk, orange juice, and melted butter into the eggs.
  4. Add the grated orange rind and chopped pecans to the mixture.
  5. Stir the liquid mixture into the dry ingredients with a few strokes until just combined; mixture will be lumpy.
  6. Do not overbeat the batter.
  7. Spoon the batter into well-greased muffin cups.
  8. Mix 1 tablespoon orange rind and 2 tablespoons pecans and sprinkle a little on top of each muffin if desired.
  9. Bake at 400°F (200°C) for 20 minutes.
