- In a separate bowl, beat the eggs with a fork.
- Blend in the milk, orange juice, and melted butter into the eggs.
- Add the grated orange rind and chopped pecans to the mixture.
- Stir the liquid mixture into the dry ingredients with a few strokes until just combined; mixture will be lumpy.
- Do not overbeat the batter.
- Spoon the batter into well-greased muffin cups.
- Mix 1 tablespoon orange rind and 2 tablespoons pecans and sprinkle a little on top of each muffin if desired.
- Bake at 400°F (200°C) for 20 minutes.
