Ingredients

  • 3 beaten eggs
  • 1/2 cup finely chopped crackers
  • 1/2 cup orange juice
  • 14 crackers
  • 2 tablespoons prepared mustard
  • 1 pound ground fully cooked ham
  • 1 pound ground pork

Instructions

  1. In a large mixing bowl, combine the beaten eggs, orange juice, cracker crumbs, and 1 teaspoon of prepared mustard.
  2. Add the mixture to the ground ham and ground pork, and mix well.
  3. Spread the meat mixture evenly into a greased jello ring mold.
  4. Firmly pack the meat into the mold to ensure it holds together.
  5. Invert the mold into a shallow pan with sides to release the ring.
  6. Remove the mold sides carefully from the meat ring.
  7. Bake at 350°F (175°C) for 50 minutes, until cooked through.
  8. Spoon off any excess fat from the top before serving.
