Ingredients

  • 6 oz. can frozen orange juice concentrate
  • 1 cup honey
  • 1 cup strong black coffee
  • 4 eggs
  • 2 Tbsp. salad oil
  • 1 cup sugar
  • 3 1/2 cups sifted flour
  • 1/4 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. allspice
  • 1 tsp. cinnamon

Instructions

  1. Combine the undiluted orange juice concentrate, honey, and strong black coffee in a mixing bowl.
  2. In a separate bowl, beat the eggs until light, then gradually add the salad oil and sugar, continuing to beat until well combined.
  3. Sift together the flour, salt, baking powder, soda, allspice, and cinnamon.
  4. Add the dry ingredients to the egg mixture alternately with the orange mixture, mixing until smooth after each addition.
  5. Pour the batter evenly into two greased 9x5x3 inch loaf pans.
  6. Bake at 325°F (160°C) for 1 hour and 10 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool, then remove from pans.
  8. Let the cakes set for 2 days before serving for best flavor development.
