Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 3/4 cup sugar
  • 4 large oranges
  • water
  • 2 eggs
  • 1/2 cup vegetable oil
  • 4 1/2 cups Raisin Bran cereal
  • 1 cup chopped pecans

Instructions

  1. In a large mixing bowl, combine flour, salt, baking soda, and sugar. Set aside.
  2. Remove the peel from two oranges and cut all oranges into eighths, removing seeds.
  3. Puree the orange segments in a blender or food processor, adding water if necessary to make 2 cups of puree.
  4. Add the orange puree, beaten eggs, vegetable oil, Raisin Bran cereal, and chopped pecans to the dry ingredients.
  5. Stir only until mixed.
  6. Fill greased muffin tins 3/4 full.
  7. Bake at 375°F (190°C) for 20 to 25 minutes.
