Orange Pecan Squares

Ingredients

  • 1 c. softened unsalted butter
  • 1/2 c. packed brown sugar
  • 2 1/3 c. flour
  • 1/2 tsp. each: cinnamon and nutmeg
  • 1 1/2 c. chopped pecans
  • 4 large eggs
  • 2 c. granulated sugar
  • 1/3 c. orange juice
  • ground rind of 1 orange
  • 1 tsp. baking powder
  • 2 Tbsp. confectioners sugar

Instructions

  1. Heat oven to 350°.
  2. Cream butter and brown sugar in large bowl until light and fluffy.
  3. Add 2 cups of flour, cinnamon and nutmeg. Add pecans and mix to blend.
  4. Press evenly over well-greased 13 x 9-inch baking pan.
  5. Bake until lightly browned at edges, about 20 minutes.
  6. Beat eggs until light and fluffy.
  7. Gradually add granulated sugar until thick and well blended.
  8. Add orange juice, orange rind, remaining 1/3 cup flour and baking powder; mix to blend.
  9. Pour orange mixture over baked crust and return to oven and bake until golden brown, 25 to 30 minutes.
  10. Remove from oven. Sprinkle with confectioners sugar.
  11. Cool and cut in squares.
