Ingredients

  • 3 lb. potatoes
  • 1 Tbsp. butter
  • 2 c. finely chopped onions
  • 3/4 c. orange juice
  • 1/4 c. cream
  • 1/4 c. sour cream
  • grated fresh orange zest

Instructions

  1. Boil and mash the potatoes.
  2. While the potatoes are boiling, cook the onions and butter in a covered pan for about 25 minutes.
  3. Mash the potatoes and add the orange juice, cooked onions, and creams.
  4. Beat the mixture well until smooth.
  5. Top with grated fresh orange zest.
  6. Place in a casserole dish and heat in the oven until hot.
