Ingredients

  • 2 c. self-rising cornmeal
  • 1 1/2 c. self-rising flour
  • 1 1/2 c. chopped celery
  • 1/2 c. oil
  • 3 eggs
  • 2 c. buttermilk
  • 1 c. chopped onion

Instructions

  1. Mix the self-rising cornmeal, self-rising flour, chopped celery, chopped onion, eggs, oil, and buttermilk until well combined.
  2. Pour the batter into a greased baking dish and bake until golden brown, like cornbread.
  3. Allow to cool, then crumble the baked cornbread into a bowl.
  4. Add chicken broth and 1 tablespoon of poultry seasoning or sage to the crumbled cornbread.
  5. Mix well and bake as desired to serve as a dressing.
