Ingredients

  • vegetable cooking spray
  • 1 tsp all-purpose flour
  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated fructose
  • 2 tsp grated orange rind
  • 2/3 cup orange juice
  • 1/4 cup vegetable oil
  • 4 egg whites

Instructions

  1. Coat the bottom of a 9 x 5-inch loaf pan with vegetable cooking spray.
  2. Dust the pan with 1 teaspoon of all-purpose flour to prevent sticking.
  3. Set the prepared pan aside.
  4. In a mixing bowl, combine 1 3/4 cups of all-purpose flour, baking powder, salt, and granulated fructose.
  5. Add grated orange rind to the dry ingredients and mix well.
  6. In a separate bowl, whisk together orange juice, vegetable oil, and egg whites until smooth.
  7. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  8. Pour the batter into the prepared loaf pan, smoothing the top.
  9. Bake at 350°F (175°C) for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.
