Ingredients

  • 4 medium sweet potatoes
  • 2 medium oranges, peeled, sectioned, and seeded
  • 1/4 cup orange juice
  • 1/4 cup brown sugar, divided
  • ground nutmeg

Instructions

  1. Scrub the sweet potatoes and cut an 'X' shape about 1 1/2 inches long and 1 inch deep in each.
  2. Brush the potatoes with orange juice and fill the slits with orange sections.
  3. Top each with 1 tablespoon of brown sugar and a dash of nutmeg.
  4. Wrap each potato in aluminum foil and bake at 375°F for 1 hour or until the potatoes are tender.
