  • 6 medium sweet potatoes
  • 2 tsp grated orange rind
  • 1 Tbsp cornstarch
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • pinch of salt
  • 1 cup orange juice
  • 3 Tbsp butter or margarine

Instructions

  1. Cook sweet potatoes in jackets in 1/2 inch of boiling, salted water until tender, about 30 minutes.
  2. Remove skins and serve.
