Ingredients

  • 2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup oil
  • 1 1/2 cups orange juice
  • 2/3 cup raisins

Instructions

  1. Combine the whole wheat flour, baking powder, baking soda, and salt in a large bowl.
  2. In a blender, mix the egg, oil, and orange juice until well combined.
  3. Pour the liquid mixture into the dry ingredients and stir just to moisten the batter.
  4. Add the raisins to the batter and mix lightly.
  5. Divide the batter evenly among 12 Pam-sprayed muffin cups.
  6. Bake at 400°F (200°C) for approximately 20 minutes or until a toothpick inserted into the center comes out clean.
