Oregon Applesauce Cake

Ingredients

  • 1/2 c. oil
  • 2 c. sugar
  • 1 large egg
  • 1 1/2 c. thick applesauce
  • 2 1/2 c. flour
  • 1 1/2 tsp. baking soda
  • 1 1/2 tsp. salt
  • 3/4 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1/2 c. water
  • 1 c. chopped walnuts
  • 3/4 c. raisins, if desired

Instructions

  1. Grease 13 x 9-inch pan.
  2. Cream oil and sugar until fluffy. Beat in egg, then applesauce.
  3. In separate bowl mix flour, baking soda, salt and spices together.
  4. Stir into creamed mixture, alternating with water.
  5. Stir in nuts and raisins.
  6. Pour into the prepared pan.
  7. Bake for 45 to 50 minutes at 350°.
  8. (Can be frozen without icing.)
  9. Delicious with cream cheese icing.
  10. This is an old family recipe.
