Ingredients

  • 2 lb. sausage
  • 1 green pepper
  • 1 1/2 c. rice
  • 3 c. water
  • 1 onion
  • 2 stalks celery
  • 1 pkg. chicken noodle soup mix

Instructions

  1. In a large pot, cook rice and chicken noodle soup mix with water until the rice is tender. Keep the lid on during cooking. Set aside.
  2. Brown sausage lightly, chopping it into small pieces. Remove sausage from the skillet and set aside. Drain off most of the fat.
  3. Chop onion, green pepper, and celery into coarse pieces. Saute them in the skillet with the remaining fat until barely tender.
  4. Add a touch of water to the skillet, cover, and cook until vegetables are tender.
  5. Add the cooked sausage and vegetables to the rice, stirring and tossing lightly to combine.
