Oriental Rice-Texas Style

- In a large pot, cook rice and chicken noodle soup mix with water until the rice is tender. Keep the lid on during cooking. Set aside.
- Brown sausage lightly, chopping it into small pieces. Remove sausage from the skillet and set aside. Drain off most of the fat.
- Chop onion, green pepper, and celery into coarse pieces. Saute them in the skillet with the remaining fat until barely tender.
- Add a touch of water to the skillet, cover, and cook until vegetables are tender.
- Add the cooked sausage and vegetables to the rice, stirring and tossing lightly to combine.
