Orzo & Mango Salad

Ingredients

  • 8 oz package Orzo, prepared-cook al dente, drain
  • 2 ripe mangos, cut in 1/2 in. cubes
  • 1 small red onion, diced
  • 1 med. cucumber, peeled, diced
  • 1 T fresh Basil, chopped
  • *Mixed Greens (mesclun)
  • *Fresh Mint
  • Dressing:
  • 1 T Dijon mustard
  • 1 t. minced garlic

Instructions

  1. Mix Dressing ingredients, refrigerate.
  2. Mix salad ingredients. Add dressing, toss lightly. Refrigerate for at least one hour.
  3. *Serving Suggestion:
  4. On small serving plates, place a handful of mixed greens in the center. Add a serving spoonful of salad. Top with sprig of mint.
