Our Good Fruitcake

Ingredients

  • 1 lb. pecan halves
  • 1/2 lb. California walnuts
  • 3/4 lb. candied cherries
  • 1/2 lb. candied pineapple
  • 1 pkg. chopped dates
  • 1/2 c. chopped prunes
  • 1 c. flour
  • 1 1/2 c. margarine
  • 1 1/2 c. sugar
  • 3 eggs
  • 1 oz. lemon extract
  • 2 c. plain flour, sifted

Instructions

  1. Mix fruit and 1 cup of flour, then set aside.
  2. Beat margarine, then add sugar and beat well.
  3. Add eggs and lemon extract. Gradually add sifted flour and baking powder.
  4. Add floured fruit to egg mixture and put into greased and floured tube pan.
  5. Cover with foil and bake at 300° for 2 1/2 hours.
  6. Put a pan of water in the oven while cake bakes.
  7. Uncover for last 5 minutes to brown.
  8. Let cake cool slightly before removing from pan.
