A hearty vegetable soup loaded with ground meats, potatoes, and tomatoes, perfect for comforting family dinners or casual gatherings with rich, savory flavors.

Ingredients

  • 1-2 lb. ground beef
  • 1 lb. ground pork and/or chicken (optional)
  • 4 green onions
  • 4-5 medium potatoes
  • 2 beef bouillon cubes
  • 2 chicken bouillon cubes
  • 1 small can garlic tomatoes
  • 1 can creamed corn

Instructions

  1. Chop green onions and brown them with ground beef in a large pot.
  2. Add cooked potatoes and the beef mixture to the pot.
  3. Add remaining ingredients: ground pork and/or chicken (if using), garlic tomatoes, creamed corn, beef and chicken bouillon cubes.
  4. Cook slowly until garlic mellows to desired taste.
  5. Season with salt and pepper to taste and serve.
