A fluffy oven-baked pancake with a golden crust, perfect for a hearty breakfast or brunch, topped with fruit preserves and sour cream for added flavor.

Ingredients

  • 6 eggs
  • 2 tsp. baking powder
  • 2 Tbsp. butter, melted
  • 1 c. all-purpose flour
  • 3/4 c. cold milk

Instructions

  1. Preheat oven very hot at 450°F.
  2. Beat eggs until foamy.
  3. Combine flour and baking powder, beginning and ending with flour, and beat with a mixer or food processor.
  4. Swirl melted butter in a 10-inch ovenproof skillet or shallow casserole, ensuring sides are well coated.
  5. Pour the egg mixture into the skillet.
  6. Bake at 450°F for 15 to 20 minutes or until fluffed and golden.
  7. Slide a spatula around the edge to loosen the pancake.
  8. Slide onto a warm plate.
  9. Top with fruit preserves and sour cream.
