- Combine drained jalapenos with sour cream, salt, and pepper.
- In a buttered casserole dish, spread one-third of the cooked rice.
- Layer with half of the sour cream mixture and half of the grated Jack cheese.
- Repeat layers: rice, sour cream mixture, and Jack cheese.
- End with the remaining one-third of the rice on top.
- Cover and bake at 350°F for 45 minutes.
