Ingredients

  • 1 pint sour cream
  • 1 (4 oz.) can diced jalapenos
  • 4 cups cooked rice
  • 1/2 pound Jack cheese
  • 1/4 pound Cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Drain the diced jalapenos.
  2. Combine drained jalapenos with sour cream, salt, and pepper.
  3. In a buttered casserole dish, spread one-third of the cooked rice.
  4. Layer with half of the sour cream mixture and half of the grated Jack cheese.
  5. Repeat layers: rice, sour cream mixture, and Jack cheese.
  6. End with the remaining one-third of the rice on top.
  7. Cover and bake at 350°F for 45 minutes.
  8. Uncover, top with grated Cheddar cheese, and bake for an additional 5 minutes.
