- Heat oven to 350°F (175°C).
- Generously grease a 13 x 9-inch (3-quart) baking dish.
- In a large bowl, combine eggs, milk, melted butter, salt, pepper, and nutmeg; beat well.
- Stir in frozen vegetables, 1 cup of shredded cheese, and chopped green or Vidalia onions; mix well.
- Pour the mixture into the greased baking dish.
- Bake at 350°F (175°C) for 25 to 30 minutes, or until eggs are just set in the center, stirring twice during baking.
- Sprinkle with the remaining 1/2 cup shredded cheese.
- Let stand for 2 to 3 minutes or until cheese is melted before serving.
