Ingredients

  • 12 eggs
  • 1/3 cup milk
  • 1/4 cup melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 16 ounces frozen cauliflower, carrots, and asparagus mixture
  • 6 ounces shredded Gruyere or Swiss cheese
  • 1/3 cup chopped green or Vidalia onions

Instructions

  1. Heat oven to 350°F (175°C).
  2. Generously grease a 13 x 9-inch (3-quart) baking dish.
  3. In a large bowl, combine eggs, milk, melted butter, salt, pepper, and nutmeg; beat well.
  4. Stir in frozen vegetables, 1 cup of shredded cheese, and chopped green or Vidalia onions; mix well.
  5. Pour the mixture into the greased baking dish.
  6. Bake at 350°F (175°C) for 25 to 30 minutes, or until eggs are just set in the center, stirring twice during baking.
  7. Sprinkle with the remaining 1/2 cup shredded cheese.
  8. Let stand for 2 to 3 minutes or until cheese is melted before serving.
