Ingredients

  • 5 lb. venison roast
  • 1/2 cup bacon drippings
  • 1 clove garlic, minced
  • 3 cups water
  • 2 cups barbecue sauce
  • 1 cup ketchup
  • 8 oz. tomato sauce
  • 1 teaspoon sugar
  • 1 cup chopped celery
  • 2 green peppers, chopped

Instructions

  1. Season the venison roast with salt and pepper, then brown in bacon drippings with minced garlic.
  2. Drain off the fat from the pan.
  3. Bake the roast at 350°F for 3 hours or until tender.
  4. Remove the meat from the pan and add water, barbecue sauce, ketchup, tomato sauce, sugar, chopped celery, and chopped green peppers to the juices.
  5. Return the meat to the oven and bake for 1 hour or until the sauce thickens.
  6. Slice the meat, then add it back to the sauce and bake for an additional 30 minutes.
  7. Serve the oven barbecued venison with rolls.
