Ingredients

  • 12 doves
  • 6 Tbsp butter
  • 3 Tbsp flour
  • 2 cups chicken broth
  • 1/4 cup minced parsley
  • 1/2 cup sherry
  • salt and pepper
  • 2 small cans button mushrooms

Instructions

  1. Season the doves with salt and pepper.
  2. Melt butter in a heavy skillet and brown the doves on all sides.
  3. Remove the browned doves and place them in a baking dish.
  4. Add flour to the skillet with the remaining butter, stirring well to make a roux.
  5. Slowly add chicken broth and sherry to the skillet, stirring constantly.
  6. Season the sauce to taste with salt and pepper.
  7. Blend the sauce well and pour it over the doves in the baking dish.
  8. Add the canned button mushrooms and minced parsley to the dish.
  9. Cover the baking dish and bake at 350°F (175°C) for 1 hour.
  10. Serve the oven-braised doves over wild rice.
