Ingredients

  • 1 lb. fresh red snapper fish fillets
  • 1/2 c. corn oil
  • 2 to 3 cloves garlic, pressed
  • 1 c. Parmesan cheese
  • 1 c. dry seasoned bread crumbs
  • 1/3 c. fresh or dried dill

Instructions

  1. Preheat oven to 500°F.
  2. Rinse fish and pat dry with paper towels.
  3. Combine oil, garlic, and dill in an oblong glass or Pyrex baking dish.
  4. Place fish in the mixture and turn to coat the fillets well.
  5. Marinate for 2 to 3 hours, turning often.
  6. Remove fish from marinade.
  7. Roll fish in Parmesan cheese, then in bread crumbs.
  8. Place on a well-greased cookie sheet.
  9. Bake for 12 to 15 minutes.
  10. Baste often with marinade so fish does not burn.
  11. When done, the fish will flake easily with a fork.
