Ingredients

  • 1 package active dry yeast
  • 1/4 cup warm water
  • 4 cups all-purpose flour
  • 2 tablespoons baking powder

  • 1 teaspoon salt
  • 2 teaspoons sugar
  • 6 large eggs
  • 1 quart buttermilk
  • 1/4 cup vegetable oil

Instructions

  1. Combine yeast and warm water in a bowl; let stand for 5 minutes.
  2. Combine flour, baking powder, baking soda, salt, and sugar in a large mixing bowl.
  3. Make a well in the center of the dry ingredients.
  4. In a separate bowl, whisk together eggs, buttermilk, and vegetable oil.
  5. Add the wet mixture to the dry ingredients in the well.
  6. Stir in the yeast mixture until just combined.
  7. Cover the batter and refrigerate for 8 hours or overnight.
  8. The next morning, stir the batter gently and cook on a hot griddle until golden brown.
