Ingredients

  • 1 1/2 lb. ground lean chunk
  • 3/4 cup chopped onion
  • 1/2 cup fine dry bread crumbs
  • 1 egg
  • 2 tablespoons ketchup
  • 1 scant cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon paprika

Instructions

  1. Mix together ground lean chunk beef, chopped onion (or dried onion flakes), bread crumbs, ketchup, milk, salt, pepper, and paprika.
  2. Spoon the mixture into a 9 x 5 x 3-inch glass loaf dish.
  3. Spread 2 tablespoons of ketchup evenly over the top of the loaf.
  4. Cover with plastic wrap, turning back one corner to vent.
  5. Microwave on Medium-high (7) for 29 to 32 minutes, rotating the dish 1/4 turn after half the time.
  6. Let stand for about 10 minutes to firm before serving.
