- Mix together ground lean chunk beef, chopped onion (or dried onion flakes), bread crumbs, ketchup, milk, salt, pepper, and paprika.
- Spoon the mixture into a 9 x 5 x 3-inch glass loaf dish.
- Spread 2 tablespoons of ketchup evenly over the top of the loaf.
- Cover with plastic wrap, turning back one corner to vent.
- Microwave on Medium-high (7) for 29 to 32 minutes, rotating the dish 1/4 turn after half the time.
- Let stand for about 10 minutes to firm before serving.
