Ingredients

  • 1 quart oysters, drained
  • 4 slices bacon
  • 1 medium onion, chopped
  • 2 ribs celery, chopped
  • 1 small bell pepper, chopped
  • 2 cups raw rice
  • Salt and pepper to taste

Instructions

  1. Fry bacon until crisp. Remove bacon and crumble it, setting aside.
  2. Sauté chopped onions, celery, and bell pepper in bacon grease until onions are translucent.
  3. Add drained oysters to the pot and cook until they release their juice, about 1 to 2 minutes.
  4. Add raw rice to the pot.
  5. Combine oyster juice with water to make 2 cups of liquid and add to the rice.
  6. Bring the mixture to a boil, then lower to a simmer, cover, and cook for exactly 20 minutes.
  7. Remove the pot from heat and let it sit, covered, for 20 minutes.
  8. Fluff the rice with a fork, season if needed, and serve.
