Ingredients

  • 1 head cauliflower
  • 1 cup celery
  • 1 red sweet pepper
  • 1 onion
  • 1/4 cup chopped sweet pickles
  • 2 oz sliced black olives
  • 2 Tbsp light mayonnaise
  • lemon juice
  • salt

Instructions

  1. Boil cauliflower for 5 minutes; cool immediately in ice water.
  2. Place cooled cauliflower in a bowl and add chopped celery, red sweet pepper, chopped onion, chopped sweet pickles, and sliced black olives if using.
  3. Add light mayonnaise and lemon juice to taste, then season with salt and pepper.
  4. Toss lightly to combine, chill, and serve.
