  • 1 cup olive oil
  • 2 saffron envelopes
  • 8 cups broth
  • 1 lb. shrimp
  • 12 clams
  • 12 mussels
  • 4 cups rice (Caniela Durodo)
  • 2 tomatoes
  • salt to taste
  • 2 red peppers

Instructions

  1. Boil the clams and mussels until they open, then clean them.

  3. In a large paella pan or wide skillet, heat the olive oil over medium heat.
  4. Add the chicken, pork shoulder, and chorizo, cooking until browned.
  5. Stir in the tomatoes and saffron envelopes, cooking for a few minutes.
  6. Add the rice and cook, stirring, until lightly toasted.
  7. Pour in the broth and bring to a boil, then reduce heat and simmer until rice is tender and liquid is absorbed, about 20 minutes.
  8. Arrange the cooked seafood on top of the rice and cook until heated through.
  9. Garnish with red peppers before serving.

Tips & Substitutions

For a more authentic flavor, consider using short-grain rice like Bomba instead of Caniela Durodo, as it absorbs flavors better. If you can't find saffron, turmeric can be a good substitute, though the flavor will vary. Always taste your broth before adding salt, as the chorizo can be salty. If you prefer a vegetarian version, omit the meat and seafood and use a variety of vegetables.

Serving Suggestions

Serve the paella straight from the pan for a rustic presentation. Accompany it with a fresh green salad or crusty bread to soak up the delicious flavors. A glass of chilled Spanish white wine or sangria pairs beautifully with this dish, enhancing the overall dining experience.

Storage & Reheating

Leftover paella can be stored in an airtight container in the refrigerator for up to three days. To reheat, add a splash of broth or water to prevent drying out, and heat on the stovetop over low heat until warmed through. Avoid microwaving, as it may change the texture of the rice.

Frequently Asked Questions

Can I use different types of seafood in this paella?

Absolutely! Feel free to customize the seafood according to your preference. You can substitute with squid, scallops, or even add mussels if you like. Just ensure that the cooking times align for each type of seafood to ensure they don't overcook.

What can I do if I don’t have a paella pan?

If you don't have a paella pan, a wide, shallow skillet will work just fine. The key is to ensure that the rice is spread out evenly to cook properly. Just keep an eye on the liquid absorption and adjust cooking times accordingly.

How can I enhance the flavor of my broth?

To enhance the flavor of your broth, consider adding aromatics like garlic, onion, and herbs during the boiling process. You could also infuse additional spices like smoked paprika or bay leaves for a more complex flavor profile. Using homemade broth will also significantly elevate the taste.
