Ingredients

  • 3 pkg. dry yeast
  • 1 1/2 c. milk, warm
  • 1/4 c. butter
  • 1 tsp. salt
  • 6 egg yolks
  • 5 c. flour
  • 1/2 c. sugar
  • 1/4 tsp. nutmeg
  • 1 tsp. lemon rind

Instructions

  1. Dissolve yeast in 1/2 cup of warm milk.
  2. Blend butter and sugar; add beaten egg yolks.
  3. Add milk and yeast mixture to the butter and sugar.
  4. Add flour, lemon rind, salt, nutmeg, and remaining cup of milk; mix well.
  5. Cover with a light dish towel and let rise in a warm place until doubled in bulk.
  6. Punch down the dough and let rise again for about 1 hour.
  7. Roll the dough to 1/2-inch thickness.
  8. Cut out donuts using the top of a wine glass or a donut cutter.
  9. Place on greased cookie sheets and cover with a dish towel; let rise again for about 1 hour.
  10. Heat 4 cups of Crisco oil in a large skillet.
  11. Drop a few pampushky into the hot oil and fry until golden brown; turn to cook evenly.
  12. Remove the fried donuts onto paper towels to absorb excess oil.
  13. When cooled, sprinkle with powdered sugar.
