Ingredients

  • 1/3 cup margarine
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • Rind of 1 lemon, grated

Instructions

  1. Cream margarine with sugar.
  2. Add beaten eggs to the mixture.
  3. Sift together flour, salt, and baking powder.
  4. Alternately add the dry ingredients and milk to the creamed mixture, beginning and ending with dry ingredients.
  5. Add grated lemon rind to the batter and fold in.
  6. Pour batter into a greased loaf pan.
  7. Bake at 350°F (175°C) for 45 minutes.
  8. Meanwhile, mix lemon juice and sugar to make a glaze.
  9. As soon as the bread is baked, drizzle the lemon glaze over the hot bread.
  10. Do not poke holes in the bread to allow the glaze to soak in.
