  • 3 tablespoons curry powder

  • fresh ground pepper
  • 3 1/2 pounds chicken, cut into pieces

  • 1 tablespoon cornstarch
  • 2 1/2 cups papaya nectar
  • 1/4 cup crystallized ginger, chopped
  • 2 tablespoons brown sugar

Instructions

  1. Preheat oven to 375°F.
  2. Combine flour, curry powder, salt, and pepper, and coat the chicken pieces.
  3. Brown the coated chicken in oil in a skillet over high heat.
  4. Drain the chicken and arrange in a shallow baking dish in a single layer.
  5. Bake for 40 minutes or until tender.
  6. Pour off oil from the skillet.
  7. Dissolve cornstarch in 3 tablespoons of papaya nectar and set aside.
  8. Pour the remaining papaya nectar into the skillet.
  9. Add the crystallized ginger and brown sugar to the skillet.
  10. Simmer on medium heat, scraping up any bottom bits.
  11. Stir in the dissolved cornstarch and cook until the sauce thickens.
  12. Stir in lemon juice.
  13. Drain excess fat from the baked chicken.
  14. Arrange papaya slices over the chicken and cover with the sauce.
  15. Return to the oven and cook for an additional 5 minutes.
  16. Serve with steamed rice.
