Ingredients

  • 2 Tbsp. olive oil
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 4 to 6 potatoes, peeled and diced
  • 2 tsp. paprika
  • 1 tomato, seeded and diced
  • salt and pepper to taste

Instructions

  1. Heat the olive oil in a saucepan and sauté the chopped onion and green pepper for about 3 minutes.
  2. Add the diced potatoes and sauté for about five minutes.
  3. Add the paprika and stir to coat the potatoes evenly.
  4. Add the diced tomato, salt, pepper, and enough water to barely cover the ingredients.
  5. Reduce heat, cover, and cook for 15 to 20 minutes until the potatoes are tender and the water is almost absorbed.
  6. Drain any excess liquid before serving if necessary.
