Ingredients

  • 1 cup Ritz crackers, finely crushed
  • salt and pepper to taste
  • 1 tablespoon parsley
  • 1/4 teaspoon cayenne pepper or red pepper flakes
  • 5 or 6 catfish fillets
  • 1 stick butter, melted
  • 1/2 cup Parmesan cheese

Instructions

  1. Preheat oven to 400°F.
  2. Set up two shallow dishes for coating the fish.
  3. Finely crush the Ritz crackers and place them in one shallow dish.
  4. In a separate shallow dish, combine salt, pepper, parsley, and cayenne pepper.
  5. Dip each catfish fillet in the seasoned mixture, then coat with crushed Ritz crackers.
  6. Place the coated fillets on a baking sheet.
  7. Drizzle or brush melted butter over the fillets.
  8. Sprinkle Parmesan cheese evenly over the coated fish.
  9. Bake in the preheated oven for approximately 20 minutes, or until fish flakes easily with a fork.
