Ingredients

  • 2 Tbsp. grated Parmesan cheese, divided
  • 1/3 cup plain low-fat yogurt
  • 2 Tbsp. prepared horseradish
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. lemon juice
  • 1 tsp. margarine, melted
  • 8 (4 oz.) perch fillets
  • vegetable cooking spray

Instructions

  1. Combine 1 tablespoon Parmesan cheese, low-fat yogurt, horseradish, Dijon mustard, lemon juice, and melted margarine in a bowl.
  2. Spread the mixture evenly on one side of each perch fillet.
  3. Place the coated fillets on a rack coated with vegetable cooking spray, with the coated side up.
  4. Place the rack in a broiler pan.
  5. Sprinkle the remaining Parmesan cheese over the coated side of the fillets.
  6. Broil the fish 6 inches from the heat source with the oven door partially open for 18 minutes or until golden and flaky.
