Ingredients

  • 12 potatoes, peeled and quartered
  • 1/2 cup margarine
  • 1 cup milk
  • 3 eggs, lightly beaten
  • 1/2 cup Parmesan cheese
  • 1/2 cup chopped parsley
  • salt and pepper

Instructions

  1. Lightly grease a shallow baking dish.
  2. Cook potatoes until tender, then drain.
  3. Return potatoes to the pot, add butter, and mash until smooth.
  4. Add milk, eggs, Parmesan cheese, chopped parsley, salt, and pepper; mash until well combined.
  5. Spoon the mixture into the prepared dish.
  6. Bake uncovered for 35-45 minutes or until puffed and golden brown.
