Ingredients

  • 12 vanilla wafers
  • 2 (8 oz.) packages cream cheese, softened
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla

Instructions

  1. Line a muffin tin with 12 foil liners.
  2. Place one vanilla wafer in the bottom of each liner.
  3. In a mixing bowl, beat softened cream cheese until smooth.
  4. Add sugar and vanilla, and mix well.
  5. In a separate bowl, beat eggs and then add to the cream cheese mixture, blending thoroughly.
  6. Spoon the filling over each vanilla wafer in the liners.
  7. Bake at 350°F (175°C) for about 15-20 minutes or until set.
  8. Allow to cool before serving.
