- Crack eggs, pouring whites into a mixing bowl and leaving yolks in one half of each shell.
- Place the eggs in an egg carton or small muffin tin to keep upright until ready to use.
- Beat egg whites until stiff; season with salt and pepper.
- Place toast on a baking sheet and butter each slice.
- Distribute cooked bacon on top of each toast.
- Divide the beaten egg whites between the toasts, mounding them high.
- Make an indentation in the center of each egg white mound and slip the yolks into these indentations.
- Top each with grated cheese.
- Bake for 7 to 10 minutes, until whites are browned and yolks are set to your preference.
