Ingredients

  • 1 cup cherry tomatoes
  • 4 carrots peeled and cut into sticks
  • 1 pound fresh Brussels sprouts
  • Herbed Cottage Cheese
  • 2 cucumbers thinly sliced
  • 1/4 pound fresh mushrooms
  • 1/2 pound frankfurters

Instructions

  1. Wash and trim cherry tomatoes.
  2. Slice cucumbers thinly.
  3. Peel carrots and cut into sticks.
  4. Wash mushrooms.
  5. Drop Brussels sprouts into boiling salted water.
  6. Reduce heat, cover, and simmer for about 10 minutes or until done.
  7. Drain Brussels sprouts.
  8. Boil frankfurters for 5 minutes, then drain or fry them.
  9. Cut frankfurters into thirds.
  10. Place cabbage head on serving platter.
  11. Skewer frankfurters and mushrooms with frilled toothpicks.
  12. Surround with cherry tomatoes, sliced cucumbers, carrot sticks, Brussels sprouts, and bread sticks.
  13. Serve with Herbed Cottage Cheese.
