Ingredients

  • 2/3 cup oil
  • 1 cup sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups plain flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix oil, sugar, egg, and molasses well in a large bowl.
  3. Sift together the dry ingredients: flour, baking soda, salt, cinnamon, and ginger.
  4. Add the dry ingredients to the molasses mixture and mix until combined.
  5. Roll the dough into 1-inch balls.
  6. Roll each ball in 1/4 cup sugar to coat.
  7. Place the coated dough balls 2 inches apart on a greased cookie sheet.
  8. Bake at 350°F (175°C) for 8 to 10 minutes until edges are set.
