Ingredients

  • 1 lb. penne, ziti or rigatoni
  • 12 plum or 4 large tomatoes, sliced thin lengthwise
  • 3 to 4 smashed garlic cloves
  • 1 long thin yellow-red sweet red pepper, sliced thin
  • 20 leaves fresh basil, torn in half
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 5 to 6 twists pepper mill
  • 8 oz. mozzarella cheese, cubed
  • freshly grated Parmesan cheese

Instructions

  1. Combine tomatoes, garlic, sweet red pepper, basil, olive oil, salt, and pepper in a large bowl. Let stand without refrigerating for at least 1.5 hours.
  2. Cook pasta until al dente, then drain well.
  3. Add cubed mozzarella to the cooked pasta.
  4. Pour the tomato sauce over the pasta and mozzarella.
  5. Mix quickly but well to combine.
  6. Serve immediately, sprinkled with freshly grated Parmesan cheese.
