Ingredients

  • 2 c. Ricotta cheese
  • 1/4 c. chopped fresh parsley
  • 1/4 c. chopped green onions
  • 1/4 c. Parmesan cheese
  • 1 egg
  • 1 large chopped onion
  • 2 c. sliced mushrooms
  • 1/2 tsp. dried oregano
  • 2 (26 oz.) jars tomato sauce
  • 2 c. Mozzarella cheese
  • 2 Tbsp. vegetable oil
  • 1 1/2 c. chopped zucchini
  • 1 tsp. dried basil
  • pepper to taste
  • 1 (1 lb.) pkg. lasagne noodles
  • 1 c. shredded Cheddar

Instructions

  1. Combine ricotta cheese, chopped parsley, chopped green onions, Parmesan cheese, and egg in a bowl.
  2. Saute garlic and onions in vegetable oil until tender.
  3. Add chopped zucchini, sliced mushrooms, dried basil, dried oregano, and pepper; cook and stir until tender-crisp.
  4. Add 2 cups of tomato sauce; simmer for 5 minutes.
  5. Cook 16 lasagne noodles until almost fully cooked. Drain, rinse in cold water, and drain again.
  6. Pour 1 1/2 cups of tomato sauce in the bottom of a 9 x 13-inch baking dish.
  7. Lay a flat layer of 4 noodles over the sauce.
  8. Top with half of the vegetable mixture and sprinkle with 1 cup of mozzarella cheese.
  9. Repeat noodles, then spread with ricotta mixture, followed by another layer of noodles.
  10. Top with remaining vegetable mixture, then layer noodles again.
  11. Spread the remaining ricotta mixture over the noodles.
  12. Add a final layer of noodles, then pour 1 1/2 cups of tomato sauce over the top and sprinkle with shredded Cheddar cheese.
  13. Bake at 350°F (175°C) for 45 minutes until bubbly and golden.
