Ingredients

  • 4 chicken tenderloins
  • 1/2 cup mushrooms
  • 1/2 cup scallions
  • 1/2 teaspoon garlic
  • 1/2 cup chopped tomato
  • 1/4 cup ham, diced
  • 1/2 cup beef broth
  • salt and pepper to taste
  • 1/2 cup white wine
  • black olives for garnish
  • cooked pasta

Instructions

  1. Heat a saute pan with nonstick spray or a small amount of oil. Cook chicken tenderloins three-quarters of the way done.
  2. Add white wine to the pan and cook for a minute.
  3. Add mushrooms, scallions, chopped tomato, diced ham, and some beef broth; cook until vegetables are tender and liquid is reduced by half.
  4. Add cooked pasta to the pan and toss to combine.
  5. Cook for an additional 2 minutes, then serve garnished with black olives.
