A flavorful pasta marinade featuring olive oil, garlic, herbs, and balsamic vinegar, perfect for light salads or pasta dishes with added seafood or chicken for extra protein.

Ingredients

  • 1 lb. pasta (short fusilli, bow ties or ziti)
  • 1 c. extra virgin olive oil
  • 2 cloves minced garlic
  • 1 Tbsp. parsley
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried oregano
  • 1/4 tsp. black pepper
  • 1/3 c. balsamic vinegar

Instructions

  1. Cook the pasta according to package instructions and drain.
  2. In a bowl, whisk together the olive oil, minced garlic, parsley, dried basil, dried oregano, black pepper, and balsamic vinegar.
  3. Toss the cooked pasta with the marinade until evenly coated.
  4. Optional: Add crabmeat, shrimp, or cooked, cut-up chicken breast to enhance the salad.
